Today I’m sharing the recipe for Cream of Broccoli soup, one of my family’s favorite winter soups. You’ll love how easy it is!
2 tablespoons butter
2 10 oz. frozen chopped broccoli (thawed)
1 ½ cups water
1 approximately 10 oz. can creamy potato soup
1 ½ cups half and half (I use low-fat)
Melt butter in a large saucepan over medium heat. Add chopped onion and saute until tender. Add water to saucepan and bring to boil, then add broccoli and reduce heat. Stir in the other ingredients and simmer until broccoli is tender. Transfer 1 1/2 cups of soup to blender and puree until smooth. Add salt, pepper, and nutmeg to taste.
